Microwave Peanut Brittle
Description: Very good homemade peanut brittle. Fun to make with kids

Ingredients:
1 1/2 cup sugar
1/2 cup water
3/4 cup light corn syrup
1 1/2 teaspoon baking soda
1 tablespoon unsalted butter
1/2 teaspoon salt
1 teaspoon vanilla
1 8 oz. can (2 cups) dry roasted peanuts
Instructions:
In a high-sided 2 quart glass dish, mix sugar, water, and light corn syrup
Microwave on HIGH until the syrup turns light brown (about 14 minutes).
Remove the caramelized syrup from micro and quickly stir in baking soda with a wooden spoon. The mixture will foam and bubble.
As soon as it begins to settle, immediately stir in butter, salt and vanilla. Then add peanuts.
Spread mixture onto a lightly greased baking dish with a wooden spoon.
Work quickly and spread it out as thin as possible.
As soon as the brittle is cold, break into serving pieces.
