Fried Rice

Bacon fried rice with egg and green onions.

Ingredients

  • Main
  • 2 cups rice
  • 4 cups water
  • 1 lb sliced bacon
  • 1 egg
  • 2 tablespoons vegetable oil or bacon grease
  • 1 bunch green onions, finely chopped with ends
  • 1 Tablespoon margarine
  • to taste soy sauce
  • to taste garlic salt

Instructions

Cook the rice in the water, stirring occasionally.

When the water is almost gone, fluff the rice and remove it from the heat.

Cook the bacon until crisp, then chop it into small pieces.

Sauté the onions with margarine. Scramble and fry the egg, chopping it into pea-size pieces.

Heat the oil in a frying pan, add the rice, and turn it until the oil is incorporated.

Add soy sauce until the rice reaches the shade of brown you like.

Add onions, bacon, egg, and finally green onions. Season with garlic salt.

Family Story

Fried rice was a regular meal in the Jones household and one that always brings back memories of family dinners. Most often, Mom and Dad served it with pork chops. Sometimes the pork chops were covered in gravy, which didn't seem like it should go with fried rice, but somehow it always worked and became part of the meal everyone remembered.

Dad usually paired fried rice with pork chops, while stir fry was almost always served over plain white rice. Even though the combinations weren't always what you might expect, they became family traditions simply because that's how Mom and Dad made them.

 

This story is only the beginning. As family members share their memories, we'll continue adding to it so future generations can understand not only how the recipe was made, but what it was like to gather around the Jones family dinner table.

2 cups rice
4 cups water
1 lb sliced bacon

2 tablespoons vegetable oil or bacon grease

Soy sauce
Garlic salt
Cook rice in water. Stir occasionally.
Just as the water is about gone, fluff rice and remove from heat.
Cook bacon until crispy and then chop into small pieces. I like to cook the bacon in the microwave.
Slice and sauté onions with one tablespoon margarine in microwave. Scramble and fry egg, chopping into pea size pieces.
Heat vegetable oil in a frying pan. Add rice and flip until the oil is incorporated into the rice.
Add soy sauce until it is the color brown you like.
Add white onions in first, then bacon, and eggs. Add green onions in last, makes it prettier. Add garlic salt to taste.
