Microwave Peanut Brittle
Very good homemade peanut brittle. Fun to make with kids

Ingredients
- 1 1/2 cup sugar
- 1/2 cup water
- 3/4 cup light corn syrup
- 1 1/2 teaspoon baking soda
- 1 tablespoon unsalted butter
- 1/2 teaspoon salt
- 1 teaspoon vanilla
- 1 8 oz. can (2 cups) dry roasted peanuts

Directions
- In a high-sided 2 quart glass dish, mix sugar, water, and light corn syrup
- Microwave on HIGH until the syrup turns light brown (about 14 minutes).
- Remove the caramelized syrup from micro and quickly stir in baking soda with a wooden spoon. The mixture will foam and bubble.
- As soon as it begins to settle, immediately stir in butter, salt and vanilla. Then add peanuts.
- Spread mixture onto a lightly greased baking dish with a wooden spoon.
- Work quickly and spread it out as thin as possible.
- As soon as the brittle is cold, break into serving pieces.
