Strawberry Pizza

Ingredients

  • 1 cup flour
  • 1/3 cup shortening
  • 1/2 teaspoon salt
  • 2-3 Tablespoons water
  • 1 8-oz package cream cheese
  • 2 tablespoons lemon juice
  • 1/2 cup strawberries (mashed)
  • 1 cup sugar
  • 1 cup water
  • 3 tablespoons cornstarch
  • Dash salt
  • 2 tablespoons lemon juice

Directions

  1. Crust: Cut shortening into flour and salt until particles are the size of peas. Sprinkle water, tossing with fork. Roll into pie crust, poke with fork and bake at 375 degrees F. until slightly brown.
  2. Filling; Mash cream cheese and 1/2 cup sugar with beater and spread thinly on pastry.
  3. Glaze: Stirring constantly, heat mashed strawberries, sugar, water, cornstarch and salt until thickened. Once thicken, add lemon juice. Pour glaze over strawberries. Cool before serving.
  4. Bake 30-40 minutes.
